Creamy lemon squares

For the crust”

  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter, softened

For the filling”

  • 1 1/2 cups granulated sugar
  • 4 large eggs
  • 1/4 cup all-purpose flour
  • 1/2 cup fresh lemon juice
  • 1/4 teaspoon baking powder
  • Zest of 2 lemons
  • Powdered sugar for dusting (optional)


Preheat your oven to 350°F (175°C) and line a 9×9-inch baking pan with parchment paper.

In a mixing bowl, combine the flour, softened butter, and powdered sugar for the crust. Mix until the mixture resembles coarse crumbs. Press the mixture into the prepared baking pan.

Bake the crust in the preheated oven for about 15-20 minutes or until it’s lightly golden. Remove from the oven and let it cool slightly.

In another bowl, whisk together the eggs, granulated sugar, flour, lemon juice, lemon zest, and baking powder until well combined.

Pour the lemon mixture over the baked crust and return it to the oven. Bake for an additional 25-30 minutes or until the filling is set and slightly golden.

Allow the lemon squares to cool in the pan before transferring to the refrigerator to chill for at least 2 hours.

Once chilled, cut into squares and dust with powdered sugar if desired.
