Grilled Beef Casserole with Hot Peppers

★Ingredients

  • 1 cup beef broth
  • 2 lbs roast beef, thinly sliced or shredded
  • 1 large onion, sliced
  • 1 red bell pepper, sliced
  • 2 cloves garlic, minced
  • 1 green bell pepper, sliced
  • 1 can (10 oz) diced tomatoes with green chilies (Rotel or similar)
  • 2-3 jalapeños, sliced (adjust for heat)
  • 2 cups shredded sharp cheddar cheese
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp salt
  • 2 tbsp olive oil
  • 1/2 tsp black pepper
  • Fresh cilantro, chopped (optional, for garnish)

★Instructions

Preheat Oven: Set the oven to 375°F (190°C).

Sauté Vegetables* In a large skillet, heat olive oil over medium heat. Add onions and garlic, sauté until softened, about 3-4 minutes. Then add the bell peppers and jalapeños, and cook for another 4-5 minutes until tender.

Seasoning: Stir in smoked paprika, cumin, chili powder, salt, and black pepper. Cook for an additional minute to release the flavors.

Add Beef & Tomatoes: Add the sliced or shredded roast beef, beef broth, and the can of diced tomatoes with green chilies. Stir everything together and let it simmer for 5-7 minutes until the flavors meld.

Assemble Casserole: Transfer the beef and vegetable mixture into a casserole dish. Sprinkle the shredded cheddar cheese evenly over the top.

Bake: Bake in the preheated oven for 15-20 minutes, or until the cheese is bubbly and golden brown.

Serve: Garnish with fresh cilantro if desired, and serve hot with rice, crusty bread, or over mashed potatoes.
