- 2 lbs roast beef, thinly sliced or shredded
- 1 large onion, sliced
- 1 red bell pepper, sliced
- 2 cloves garlic, minced
- 1 green bell pepper, sliced
- 1 can (10 oz) diced tomatoes with green chilies (Rotel or similar)
- 2-3 jalapeños, sliced (adjust for heat)
- 2 cups shredded sharp cheddar cheese
- 1 tsp smoked paprika
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp salt
- 2 tbsp olive oil
- 1/2 tsp black pepper
- Fresh cilantro, chopped (optional, for garnish)
★Instructions
Preheat Oven: Set the oven to 375°F (190°C).
Sauté Vegetables* In a large skillet, heat olive oil over medium heat. Add onions and garlic, sauté until softened, about 3-4 minutes. Then add the bell peppers and jalapeños, and cook for another 4-5 minutes until tender.
Seasoning: Stir in smoked paprika, cumin, chili powder, salt, and black pepper. Cook for an additional minute to release the flavors.
Add Beef & Tomatoes: Add the sliced or shredded roast beef, beef broth, and the can of diced tomatoes with green chilies. Stir everything together and let it simmer for 5-7 minutes until the flavors meld.
Assemble Casserole: Transfer the beef and vegetable mixture into a casserole dish. Sprinkle the shredded cheddar cheese evenly over the top.
