1 onion, finely chopped
2 cloves garlic, minced
1 lb (450 g) minced beef or pork
1 cup shredded cheese (cheddar or your choice)
4 large potatoes, peeled and sliced
2 large eggs
1 cup milk
1 tsp dried thyme or rosemary
Salt and pepper to taste
1 cup frozen peas or mixed vegetables (optional)
2 tbsp olive oil
1 tbsp chopped fresh parsley (for garnish)
★Instructions
Preheat Oven* Preheat your oven to 375°F (190°C).
Cook the Meat * In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and cook until softened. Add the minced meat, breaking it up with a spoon. Cook until browned and fully cooked. Season with salt, pepper, and dried thyme or rosemary. If using, add frozen peas or mixed vegetables and cook for a few more minutes. Drain excess fat if needed.
Prepare the Potatoes: While the meat cooks, slice the potatoes thinly (about 1/8 inch thick). You can parboil them for 5-7 minutes to soften them slightly, but this step is optional.
Mix Egg and Milk: In a bowl, whisk together the milk and eggs. Season with a bit of salt and pepper.
Assemble the Casserole: In a greased baking dish, arrange a layer of potato slices at the bottom. Spread half of the cooked meat mixture over the potatoes. Repeat the layers, ending with a layer of potatoes.
Add the Liquid* Pour the milk and egg mixture evenly over the top of the casserole. Sprinkle the shredded cheese on top.
Bake: Cover the dish with aluminum foil and bake in the preheated oven for 40 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the potatoes are tender and the top is golden brown.
Garnish and Serve:د* Let the casserole cool for a few minutes before garnishing with chopped fresh parsley. Serve warm.
