Homemade Chocolate Coconut Bars

★Ingredients

1/2 cup sweetened condensed milk

2 cups shredded coconut (unsweetened)

1 1/2 cups chocolate chips (milk, dark, or white)

2 teaspoons coconut oil (optional, for a smoother chocolate coating)

1 teaspoon vanilla extract (optional)

★Instructions

  1. Prepare the Coconut Mixture
  • In a mixing bowl, combine the shredded coconut, sweetened condensed milk, and vanilla extract (if using).
  • Stir until all the ingredients are well mixed, forming a sticky coconut mixture.
  1. Shape the Bars

Line a baking sheet with parchment paper.

Using your hands, shape the coconut mixture into small rectangular bars (or your preferred size).

Place the bars on the lined baking sheet.

Chill the bars in the refrigerator for at least 30 minutes to help them firm up.

  1. Melt the Chocolate

Double Boiler Method Place the chocolate chips in a heatproof bowl. Set the bowl over a pot of simmering water (without letting the bowl touch the water). Stir until the chocolate is completely melted and smooth.

Microwave Method *Place the chocolate chips in a microwave-safe bowl. Heat in 30-second intervals, stirring after each interval, until melted and smooth.

If using, stir in the coconut oil for a shinier finish.

  1. Coat the Coconut Bars

Once the coconut bars are firm, use a fork to dip each bar into the melted chocolate, ensuring it’s fully coated.

Let the excess chocolate drip off before placing the bar back on the parchment-lined baking sheet.

Repeat for all the bars.

  1. Chill and Harden

Place the chocolate-covered bars back in the refrigerator for 15-20 minutes or until the chocolate is completely set.

  1. Serve and Store

Enjoy the bars straight from the fridge for a refreshing treat, or let them sit at room temperature for a softer texture.
