For the Pudding:
1/2 cup sugar
2 cups whole milk
4 large egg yolks
2 tbsp cornstarch
1/4 cup mascarpone cheese
1 tsp vanilla extract
For the Coffee Layer
2 tbsp coffee liqueur (optional)
1/2 cup strong brewed coffee (cooled)
For the Topping:
12-16 ladyfinger cookies (split into small pieces)
2 tbsp powdered sugar
1 cup heavy cream (whipped to soft peaks)
Cocoa powder (for dusting)
1 tsp vanilla extract
Chocolate shavings (optional)
★Instructions
- Make the Pudding
- In a medium saucepan, whisk together milk, sugar, cornstarch, and egg yolks until smooth.
- Heat over medium heat, whisking constantly, until the mixture thickens (about 5-7 minutes). Once it starts to bubble, remove from heat.
- Stir in the vanilla extract and mascarpone cheese until smooth. Let it cool slightly.
- Prepare the Coffee Layer
In a small bowl, mix the cooled coffee and coffee liqueur (if using).
- Dip the ladyfinger pieces quickly into the coffee mixture, ensuring they absorb some coffee but don’t become soggy.
- Assemble the Cups
- In small serving glasses or cups, layer soaked ladyfinger pieces at the bottom.
Spoon a layer of the warm mascarpone pudding over the ladyfingers.
Repeat layers until you reach the top of the cup, ending with pudding.
- Whip the Cream
- In a chilled bowl, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form.
- Top and Serve
Add a dollop of whipped cream to each pudding cup.
- Dust with cocoa powder and garnish with chocolate shavings, if desired.
Chill in the fridge for at least 2 hours before serving.
