For the Batter.
2 cups sugar
1 cup softened butter
2 cups buttermilk (or homemade buttermilk using 2 cups milk + 2 tablespoons vinegar)
2 eggs
Juice from one lemon
2 teaspoons baking soda
4 cups all-purpose flour
For the Cinnamon-Sugar Mixture.
2 teaspoons cinnamon
2/3 cup sugar
★Instructions
- Prepare the Batter.
- In a large mixing bowl, cream together the softened butter and sugar until smooth.
- Add the eggs one at a time, mixing well after each.
- Stir in the buttermilk and lemon juice until well combined.
- Gradually add the flour and baking soda, mixing until the batter is smooth and fully incorporated.
- Prepare the Cinnamon-Sugar Mix
- In a small bowl, mix together the sugar and cinnamon.
- Assemble the Bread.
- Preheat the oven to 350°F (175°C) and grease two loaf pans.
- Pour half of the batter into the pans, spreading it evenly.
- Sprinkle a generous amount of the cinnamon-sugar mixture over the batter.
- Pour the remaining batter over the cinnamon layer, then sprinkle more cinnamon-sugar mix on top.
- Bake.
- Bake for about 50-60 minutes or until a toothpick inserted in the center comes out clean.
- Allow the bread to cool in the pans for 10 minutes before removing to a wire rack.
