1 ribeye steak (about 1.5 inches thick)

2 tablespoons unsalted butter

- Prepare the Steak
- Let the ribeye sit at room temperature for about 30 minutes before cooking. This helps it cook evenly.
- Season the Steak
- Generously season both sides of the ribeye with sea salt and freshly ground black pepper.
- Preheat the Oven
Preheat your oven to 400°F (200°C).
- Sear the Steak:
- Heat a cast-iron skillet over high heat until it’s smoking hot. Place the ribeye in the skillet and sear for 2 minutes on each side to develop a nice crust.
- Add Flavor
- Reduce the heat to medium. Add the butter, crushed garlic, and rosemary (if using) to the skillet. As the butter melts, tilt the skillet slightly and spoon the butter over the steak for about 1-2 minutes.
- Finish in the Oven
- Transfer the skillet to the preheated oven. Roast the steak for 6-8 minutes for medium-rare, adjusting the time based on your desired doneness.
- Rest the Steak
- Once done, remove the steak from the oven and let it rest for about 5 minutes. This allows the juices to redistribute for a tender steak.
