★Ingredients (for 8 portions)
½ cup of diced celery
2 cups of dry elbow macaroni
1½ cups of mayonnaise
½ cup of grated carrots
¼ cup of minced sweet onion
2 thinly sliced green onions
2 teaspoons of oil
¼ cup of apple cider vinegar
¼ cup of sugar
1 teaspoon of salt
½ teaspoon of ground pepper
★Instructions
- Cook the macaroni according to package instructions. Drain and set aside.
- In a large bowl, mix together the vinegar, oil, salt, sugar, and pepper.
- Toss the warm macaroni into the vinegar mixture and stir well. Let it cool for 10-15 minutes.
