★Ingredients
For the meatballs
1/2 cup breadcrumbs
1 lb (450g) ground beef or turkey
1/4 cup finely chopped onions
1 egg
1/4 cup milk
1 clove garlic, minced
1 tablespoon soy sauce
Salt and pepper to taste
For the sweet and sour sauce
1/2 cup ketchup
1 cup pineapple chunks (canned or fresh)
1/4 cup vinegar (apple cider or white vinegar)
1/3 cup brown sugar
1 tablespoon cornstarch (mixed with 2 tablespoons water)
1 tablespoon soy sauce
★Instructions
- Prepare the meatballs*
Preheat the oven to 400°F (200°C).
- In a large bowl, mix together the ground meat, breadcrumbs, egg, chopped onions, garlic, milk, soy sauce, salt, and pepper.
- Form the mixture into small meatballs (about 1 inch in diameter) and place them on a greased baking sheet.
- Bake in the preheated oven for 15-20 minutes, until they are browned and cooked through.
- Prepare the sweet and sour sauce*
- While the meatballs are baking, combine the ketchup, brown sugar, vinegar, soy sauce, and the cornstarch-water mixture in a medium saucepan.
- Cook the sauce over medium heat, stirring frequently, until it thickens and bubbles.
- Add the pineapple chunks into the sauce and let them simmer for a couple of minutes.
- Combine and serve*
- Once the meatballs are cooked, add them to the sauce and stir gently to coat them evenly.
Let the meatballs simmer in the sauce for about 5-10 minutes.
Serve warm, optionally over rice or as an appetizer.
