Cheesy Beef and Potato Casserole

★Ingredients

4-5 large potatoes, peeled and diced

500g (1 lb) ground beef

1 bell pepper, chopped (optional)

1 medium onion, chopped

1 cup shredded cheddar cheese

2-3 cloves of garlic, minced

1 teaspoon paprika

1 tablespoon olive oil

1 teaspoon cumin (optional)

Salt and pepper to taste

Fresh parsley for garnish (optional)

★Instructions

  1. Prepare the Potatoes

Preheat the oven to 180°C (350°F).

Peel and dice the potatoes. Boil them in salted water for about 10 minutes or until slightly tender but not fully cooked. Drain and set aside.

  1. Cook the Beef

In a large skillet, heat the olive oil over medium heat.

Add the chopped onion and cook until softened, about 3-4 minutes.

Add the ground beef and garlic. Cook until the beef is browned and fully cooked through. Season with paprika, cumin (if using), salt, and pepper. Stir in the chopped bell pepper if desired, and cook for another 2-3 minutes.

  1. Assemble the Casserole

In a greased baking dish, layer the diced potatoes evenly on the bottom.

Spread the cooked beef mixture evenly on top of the potatoes.

Sprinkle the shredded cheddar cheese generously over the beef layer.

Place the dish in the preheated oven and bake for 20-25 minutes, or until the cheese is melted, bubbly, and golden.
