1 large carrot, grated
2 medium zucchinis, grated
2 eggs
1 small onion, finely chopped
1/2 cup all-purpose flour (or more as needed)
1/4 teaspoon baking powder
1/4 cup fresh parsley, chopped

★Instructions
Prepare the vegetables: Grate the zucchinis and carrots. Place them in a colander, sprinkle with salt, and let them sit for about 10 minutes. This will help to remove excess water. After 10 minutes, press out as much moisture as possible.
Mix the ingredients: In a large bowl, combine the grated zucchini, carrot, onion, parsley, eggs, flour, baking powder, salt, and pepper. Stir until the mixture is well-combined. If the mixture is too wet, add a bit more flour.
Shape the fritters: Take a handful of the mixture and form it into small patties or balls.
Fry the fritters: Heat a large pan over medium heat and add a couple of tablespoons of olive oil. Fry the patties for 3-4 minutes on each side, or until golden brown and crispy.
Serve: Transfer the cooked fritters to a plate lined with paper towels to drain any excess oil. Serve warm.
