Simple Rice Cooker Vegetable Fried Rice

★Ingredients

1 ½ cups of mixed vegetables (carrots, peas, zucchini, etc.)

2 cups of basmati or jasmine rice (rinsed)

1 small onion (chopped)

1 tablespoon oil or butter

1-inch ginger (grated)

2 cloves garlic (minced)

2 cups water or vegetable broth

1 cinnamon stick (optional)

Black pepper to taste

Salt to taste

Fresh cilantro (optional, for garnish)

★Instructions

  1. Prepare the rice* Rinse the rice under cold water until the water runs clear. Drain and set aside.
  2. Sauté vegetables* In the rice cooker, heat oil or butter using the sauté function (if available), or in a separate pan. Add chopped onion, garlic, and ginger, and cook until they soften and become fragrant (about 2-3 minutes).
  3. Add spices* If you like, add the cinnamon stick for flavor and stir for 1 minute.
  4. Add vegetables and rice* Stir in the mixed vegetables (like peas, carrots, and zucchini) and rice. Mix everything well.
  5. Cook the rice* Add water or vegetable broth, salt, and pepper. Close the rice cooker lid and cook using the regular rice setting.
  6. Let it steam* Once the rice is done, let it sit in the cooker for an additional 5-10 minutes to allow the flavors to meld together.
  7. Serve: Fluff the rice with a fork and garnish with fresh cilantro if desired. Serve warm.
