Chickpea Patties with Vegetables and Egg Yolk

★Ingredients

3 egg yolks

2 cups cooked chickpeas

1/2 small onion, finely chopped

1/2 red bell pepper, finely chopped

1/4 cup fresh parsley, chopped

1/2 tsp cumin (optional)

1/2 tsp paprika (optional)

Salt and pepper to taste

Olive oil for frying

For the Yogurt Sauce

1 cup plain yogurt

1 tsp lemon juice

1 tbsp fresh dill, chopped (or any herb of your choice)

Salt and pepper to taste

★Instructions

  • Prepare the Patties

In a large bowl, mash the chickpeas until they are smooth but still slightly chunky.

Add the egg yolks, red bell pepper, onion, parsley, salt, pepper, and spices (if using).

Mix everything together until well combined.

  • Form the Patties

Shape the mixture into small patties.

Heat olive oil in a pan over medium heat.

Cook the patties for about 3-4 minutes on each side, until golden brown.

  • Make the Yogurt Sauce

In a small bowl, mix the yogurt, chopped dill, lemon juice, salt, and pepper.

Stir well and adjust seasoning to taste.

  • Serve

Serve the patties warm with the yogurt sauce on the side.
