1 lb (450g) ground beef
1 cup breadcrumbs
1/2 cup grated Parmesan cheese
2 large eggs
1/2 cup milk
3 cloves garlic, minced
1 small onion, finely chopped
1/4 cup fresh parsley, chopped
1 tsp salt
1/2 tsp black pepper
1 tsp dried Italian herbs (optional)
Herb Crust:
1/4 cup grated Parmesan cheese
1/2 cup breadcrumbs
2 tbsp fresh parsley, finely chopped
1 tbsp olive oil
★Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C).
- Mix the Meatloaf: In a large bowl, combine the ground beef, ground pork, breadcrumbs, Parmesan cheese, eggs, milk, onion, garlic, parsley, salt, pepper, and Italian herbs. Mix well until all ingredients are thoroughly combined.
- Form the Loaf: Shape the mixture into a loaf on a baking sheet lined with parchment paper.
- Prepare the Herb Crust: In a small bowl, combine the breadcrumbs, Parmesan cheese, parsley, and olive oil. Mix until it resembles a crumbly texture. Press this mixture evenly on top of the meatloaf.
- Bake: Place the meatloaf in the oven and bake for 1 hour or until the internal temperature reaches 160°F (71°C).
- Serve: Slice and serve over mashed potatoes, garnished with additional parsley if desired.
