Meatloaf with Breadcrumbs and Herbs

★Ingredients

1 lb (450g) ground pork

1 lb (450g) ground beef

1 cup breadcrumbs

1/2 cup grated Parmesan cheese

2 large eggs

1/2 cup milk

3 cloves garlic, minced

1 small onion, finely chopped

1/4 cup fresh parsley, chopped

1 tsp salt

1/2 tsp black pepper

1 tsp dried Italian herbs (optional)

Herb Crust:

1/4 cup grated Parmesan cheese

1/2 cup breadcrumbs

2 tbsp fresh parsley, finely chopped

1 tbsp olive oil

★Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C).
  2. Mix the Meatloaf: In a large bowl, combine the ground beef, ground pork, breadcrumbs, Parmesan cheese, eggs, milk, onion, garlic, parsley, salt, pepper, and Italian herbs. Mix well until all ingredients are thoroughly combined.
  3. Form the Loaf: Shape the mixture into a loaf on a baking sheet lined with parchment paper.
  4. Prepare the Herb Crust: In a small bowl, combine the breadcrumbs, Parmesan cheese, parsley, and olive oil. Mix until it resembles a crumbly texture. Press this mixture evenly on top of the meatloaf.
  5. Bake: Place the meatloaf in the oven and bake for 1 hour or until the internal temperature reaches 160°F (71°C).
  6. Serve: Slice and serve over mashed potatoes, garnished with additional parsley if desired.
