★Ingredients

1 cup shredded cheddar cheese (or Mexican cheese blend)

2 cups cooked, shredded chicken

1 can (10 oz) cream of chicken soup

8 flour or corn tortillas

1 cup sour cream

1/4 cup chopped green chiles

1/4 cup chopped cilantro (optional)

1/2 cup chicken broth

Salt and pepper to taste

★Instructions

  • Prepare the Filling: In a mixing bowl, combine the shredded chicken, half of the shredded cheese, green chiles, salt, and pepper. Stir well until evenly mixed.
  • Fill the Tortillas: Take each tortilla and place a portion of the chicken mixture in the center. Roll the tortilla and place it seam-side down in a greased baking dish.
  • Make the Creamy Sauce: In a separate bowl, mix the cream of chicken soup, sour cream, and chicken broth until smooth. Pour this sauce evenly over the enchiladas in the baking dish.
