Amish Cinnamon Bread

  • 2 cups sugar
  • 1 cup butter, softened
  • 2 large eggs
  • 4 cups all-purpose flour
  • 2 teaspoons baking soda
  • 2 cups buttermilk (or 2 cups milk + 2 tablespoons vinegar or lemon juice)

Cinnamon-Sugar Mixture*

  • 2 teaspoons cinnamon
  • ⅔ cup sugar

★Instructions

Preheat the oven: Set the oven to 350°F (175°C). Grease two 9×5-inch loaf pans.

Make the batter: In a large mixing bowl, cream the softened butter and 2 cups of sugar until light and fluffy. Add the eggs and mix well. Stir in the buttermilk and baking soda until combined.

Add flour: Gradually mix in the flour until the batter is smooth.

Prepare cinnamon-sugar mixture: In a small bowl, mix together ⅔ cup of sugar and 2 teaspoons of cinnamon.

Layer the batter and cinnamon-sugar: Pour half of the batter into the two greased loaf pans, spreading it evenly. Sprinkle ¾ of the cinnamon-sugar mixture over the batter in the pans.

Add remaining batter: Pour the remaining batter over the cinnamon layer, then sprinkle the remaining cinnamon-sugar mixture on top.

Swirl the cinnamon: Use a knife to gently swirl the cinnamon mixture through the batter, creating a marbled effect.

Bake: Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean.

Cool and serve: Let the bread cool in the pans for about 10 minutes before transferring to a wire rack to cool completely.
