How to prepare natural citrus extract at home

★Ingredients

500 ml of vodka or neutral alcohol (for a non-alcoholic version, use water and a preservative like citric acid or vinegar)

5-6 medium-sized lemons (or oranges), peeled

500 ml of water (optional, for diluting)

100 grams of sugar

★Instructions

  • Prepare the Peel*

Peel the lemons (or oranges), making sure to remove only the zest, avoiding the white pith, as it can be bitter.

  • Infuse the Alcohol*

Place the citrus peels in a large glass jar and pour the vodka over them.

Close the jar tightly and let it sit in a cool, dark place for about 7-10 days. Shake the jar gently every day to ensure the infusion.

  • Strain the Liquid*

After the infusion period, strain the peels from the liquid using a fine mesh strainer or cheesecloth.

Discard the peels and transfer the liquid into a clean bottle.

  • Prepare the Syrup

In a small saucepan, heat the water and sugar together until the sugar dissolves completely.

Allow it to cool.

  • Combine and Store*

Mix the syrup with the citrus-infused alcohol for a sweeter flavor.

Bottle the final mixture and store it in the fridge.

Usage*

This citrus extract can be used to flavor desserts, cocktails, or teas.
