- Marinate the Pork Chops:
In a bowl, whisk together the olive oil, soy sauce, vinegar, honey (or brown sugar), minced garlic, thyme, paprika, salt, and pepper.
Place the pork chops in a resealable plastic bag or shallow dish and pour the marinade over them. Seal the bag or cover the dish, then refrigerate for at least 30 minutes (or up to 4 hours for more flavor).
- Preheat the Grill:
Preheat your grill to medium-high heat. If using a charcoal grill, make sure the coals are hot and have a light coating of ash.
- Grill the Pork Chops:
Remove the pork chops from the marinade, letting the excess drip off. Discard the marinade.
Place the pork chops on the grill and cook for about 4-5 minutes per side, or until they reach an internal temperature of 145°F (63°C) and are nicely charred.
- Rest and Serve:
Remove the pork chops from the grill and let them rest for 5 minutes to allow the juices to redistribute.
Serve warm with your choice of sides, such as grilled vegetables, mashed potatoes, or a fresh salad.
Tips:
For added flavor, you can use fresh herbs instead of dried.
If you want to add a smoky flavor, consider using a grill with wood chips.
Make sure not to overcook the pork chops, as they can become dry.
