Roasted Beetroot Salad with Ginger

★Ingredients

3 medium beets, roasted and cut into cubes

1 tablespoon fresh ginger, finely grated

2 tablespoons olive oil

1 teaspoon honey (optional)

1 tablespoon lemon juice or apple cider vinegar

Salt and pepper to taste

Fresh parsley or cilantro for garnish

★Instructions

  1. Roast the Beets:

Preheat the oven to 400°F (200°C).

Wrap the beets in foil and roast them for 45–60 minutes or until they are tender.

Once cooled, peel the beets and cut them into cubes.

  1. Prepare the Dressing:

In a small bowl, combine the grated ginger, olive oil, lemon juice or vinegar, honey (if using), salt, and pepper.

Whisk together until well blended.

  1. Assemble the Salad:

Place the beet cubes in a large bowl.

Drizzle the ginger dressing over the beets and toss until they are well coated.

Garnish with chopped parsley or cilantro.

  1. Serve:

Serve the salad cold or at room temperature as a side dish or light lunch.
