★Ingredients
2 cups vegetable broth or water
1 cup red lentils
2 cloves garlic, minced
1 medium onion, diced
1 teaspoon cumin
1 teaspoon turmeric
2 tablespoons olive oil
Salt and pepper to taste
Fresh cilantro or parsley for garnish
★Directions
- Prepare the lentils
Rinse the red lentils under cold water until the water runs clear to remove any dust or debris.
- Cook the aromatics
In a saucepan, heat the olive oil over medium heat. Add the chopped onion and garlic, and stir until soft and translucent.
Add the turmeric and cumin, and stir for another minute until the spices are fragrant.
- Simmer the lentils
Add the washed lentils and stock or water to the pot. Bring to a boil, then reduce the heat and simmer uncovered for 15-20 minutes, or until the lentils are cooked through and the liquid has mostly been absorbed.
- Season and serve
Season the cooked lentils with salt and pepper to taste. If the mixture is too thick, add a little water or stock to get the desired consistency.
Garnish with chopped fresh coriander or parsley before serving.
