Mini Zucchini Cheese Muffins

★Ingredients

1 large zucchini, grated

1 teaspoon baking powder

2 cups all-purpose flour

½ teaspoon baking soda

½ teaspoon salt

½ cup grated cheddar cheese (or mozzarella)

¼ teaspoon ground black pepper

¼ cup Parmesan cheese, grated

2 large eggs

⅓ cup olive oil

½ cup milk

1 clove garlic, minced (optional)

2 tablespoons fresh parsley, chopped (optional)

★Instructions

  1. Preheat oven: Preheat your oven to 350°F (175°C). Grease or line a muffin tin.
  2. Prepare zucchini: Grate the zucchini and squeeze out any excess water using a clean kitchen towel or cheesecloth.
  3. Mix dry ingredients: In a large bowl, combine flour, baking powder, baking soda, salt, and pepper.
  4. Mix wet ingredients: In another bowl, whisk the eggs, milk, and olive oil together until well combined. Add the garlic and parsley if using.
  5. Combine mixtures: Gradually add the wet mixture into the dry ingredients, stirring until just combined. Fold in the grated zucchini and cheeses.
  6. Spoon into muffin tin: Divide the batter evenly into the muffin cups.
  7. Bake: Bake for 20-25 minutes, or until the muffins are golden brown on top and a toothpick inserted into the center comes out clean.
  8. Cool and serve: Allow the muffins to cool slightly before removing them from the tin. Serve warm or at room temperature.
