Stuffed pepper soup

★Ingredients

  • 1 large onion, diced
  • 1 lb ground beef or ground turkey
  • 3 bell peppers (any color), diced
  • 1 can (14.5 oz) diced tomatoes
  • 3 cloves garlic, minced
  • 4 cups beef broth or chicken broth
  • 1 can (15 oz) tomato sauce
  • 1 cup cooked rice
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 tsp smoked paprika
  • Fresh parsley, chopped (for garnish)
  • Salt and pepper to taste

★Instructions

In a large pot or Dutch oven, brown the ground beef or turkey over medium heat until fully cooked. Drain any excess fat.

Add the diced onion and bell peppers to the pot. Cook for about 5 minutes, until the vegetables start to soften.

Stir in the minced garlic and cook for another 1-2 minutes until fragrant.

Add the diced tomatoes, tomato sauce, and beef or chicken broth to the pot. Stir to combine.

Season the soup with dried oregano, dried basil, smoked paprika, salt, and pepper. Bring the mixture to a boil.

Once boiling, reduce the heat to low and let the soup simmer for 20-25 minutes, allowing the flavors to meld together.

Stir in the cooked rice and let it heat through for another 5 minutes.

Taste and adjust seasoning if needed.
