Poppy seed rolls

★Ingredients

  • 1/4 cup granulated sugar
  • 4 cups all-purpose flour
  • 1 cup warm milk (about 110°F or 45°C)
  • 1 packet (2 1/4 tsp) active dry yeast
  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • 1 tsp salt

For the Poppy Seed Filling*

1/2 cup milk

1 cup poppy seeds

1/2 cup granulated sugar

1 tbsp unsalted butter

2 tbsp honey

1/4 tsp ground cinnamon (optional)

1 tsp vanilla extract

For the Glaze*

  • 2-3 tbsp milk
  • 1/2 tsp vanilla extract
  • 1 cup powdered sugar

★Instructions

Making the Dough*

  1. In a small bowl, mix the warm milk and sugar. Sprinkle the yeast over the milk and let it sit for about 5-10 minutes until it becomes frothy.
  2. In a large mixing bowl, combine the flour and salt. Add the yeast mixture, melted butter, and eggs. Mix until the dough comes together.
  3. Knead the dough on a floured surface for about 5-7 minutes until it becomes smooth and elastic.
  4. Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1-2 hours, or until it has doubled in size.

Preparing the Filling*

  1. In a saucepan, combine the poppy seeds, milk, sugar, honey, butter, and vanilla extract. Cook over medium heat, stirring constantly, until the mixture thickens, about 10-15 minutes.
  2. Remove from heat and let it cool completely.

Assembling the Rolls*

  1. Preheat your oven to 350°F (175°C). Grease a baking sheet or line it with parchment paper.
  2. Punch down the risen dough and roll it out on a floured surface into a large rectangle, about 1/4 inch thick.
  3. Spread the cooled poppy seed filling evenly over the dough.
  4. Starting from one of the long edges, tightly roll up the dough into a log.
  5. Cut the log into 1-inch thick slices and place them on the prepared baking sheet, cut side down.
  6. Cover the rolls with a kitchen towel and let them rise for another 30 minutes.

Baking*

  1. Bake the rolls in the preheated oven for 20-25 minutes, or until they are golden brown.
  2. Remove from the oven and let them cool slightly.

Making the Glaze*

  1. In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth.
  2. Drizzle the glaze over the warm rolls.
