- 1/4 cup granulated sugar

For the Poppy Seed Filling*
1/2 cup milk
1 cup poppy seeds
1/2 cup granulated sugar
1 tbsp unsalted butter
2 tbsp honey
1/4 tsp ground cinnamon (optional)
1 tsp vanilla extract
For the Glaze*
- 2-3 tbsp milk
- 1/2 tsp vanilla extract
- 1 cup powdered sugar

Making the Dough*
- In a small bowl, mix the warm milk and sugar. Sprinkle the yeast over the milk and let it sit for about 5-10 minutes until it becomes frothy.
- In a large mixing bowl, combine the flour and salt. Add the yeast mixture, melted butter, and eggs. Mix until the dough comes together.
- Knead the dough on a floured surface for about 5-7 minutes until it becomes smooth and elastic.
- Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1-2 hours, or until it has doubled in size.
Preparing the Filling*
- In a saucepan, combine the poppy seeds, milk, sugar, honey, butter, and vanilla extract. Cook over medium heat, stirring constantly, until the mixture thickens, about 10-15 minutes.
- Remove from heat and let it cool completely.
Assembling the Rolls*
- Preheat your oven to 350°F (175°C). Grease a baking sheet or line it with parchment paper.
- Punch down the risen dough and roll it out on a floured surface into a large rectangle, about 1/4 inch thick.
- Spread the cooled poppy seed filling evenly over the dough.
- Starting from one of the long edges, tightly roll up the dough into a log.
- Cut the log into 1-inch thick slices and place them on the prepared baking sheet, cut side down.
- Cover the rolls with a kitchen towel and let them rise for another 30 minutes.
Baking*
- Bake the rolls in the preheated oven for 20-25 minutes, or until they are golden brown.
- Remove from the oven and let them cool slightly.
Making the Glaze*
- In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth.
- Drizzle the glaze over the warm rolls.
