Cranberry and orange bread with simple sauce

★Ingredients

1 cup granulated sugar

2 cups all-purpose flour

1 ½ teaspoons baking powder

½ teaspoon salt

½ teaspoon baking soda

1 cup fresh or frozen cranberries, chopped

¾ cup freshly squeezed orange juice (from about 2 oranges)

1 tablespoon orange zest (from about 1 orange)

½ cup vegetable oil

1 teaspoon vanilla extract

2 large eggs

For the Glaze*

  • 2-3 tablespoons freshly squeezed orange juice
  • 1 cup powdered sugar

★Instructions

Preheat Oven*
Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.

Prepare Dry Ingredients*
In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

Add Cranberries and Orange Zest*
Stir in the chopped cranberries and orange zest, making sure they are evenly distributed throughout the flour mixture.

Mix Wet Ingredients*
In another bowl, whisk together the orange juice, vegetable oil, eggs, and vanilla extract until well combined.

Combine Ingredients*
Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix; a few lumps are okay.

Bake*
Pour the batter into the prepared loaf pan. Bake in the preheated oven for 55-65 minutes, or until a toothpick inserted into the center of the bread comes out clean.

Cool*
Allow the bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.

Prepare the Glaze*
In a small bowl, whisk together the powdered sugar and 2-3 tablespoons of orange juice until you reach your desired consistency. The glaze should be smooth and pourable.

Glaze the Bread*
Once the bread is completely cool, drizzle the glaze over the top. Let the glaze set before slicing and serving.
