Holi Holi Baked Chicken

An easy way to prepare a delicious tropical meal with this Baked Holi Chicken recipe. 1 cup pineapple juice

4 boneless, skinless chicken breasts

1/4 cup brown sugar

1/2 cup soy sauce

1/4 cup ketchup

2 tablespoons rice vinegar

1 teaspoon grated ginger

2 cloves garlic, minced

Optional: sliced green onions and sesame seeds for garnish

1/4 teaspoon black pepper


Preheat your oven to 375°F (190°C).

In a bowl, whisk together pineapple juice, soy sauce, brown sugar, ketchup, rice vinegar, garlic, ginger, and black pepper to make the marinade.

Place chicken breasts in a baking dish and pour the marinade over them, making sure they are coated evenly.

Cover the dish with foil and let the chicken marinate in the refrigerator for at least 30 minutes, or ideally overnight for more flavor.

Bake the chicken in the preheated oven for 25-30 minutes, or until the internal temperature reaches 165°F (74°C), basting occasionally with the marinade.

Once cooked, remove the foil and broil the chicken for an additional 3-5 minutes to caramelize the sauce.
