Soft banana cake with luxurious cream cheese frosting

★Ingredients

  • 1 1/2 teaspoons baking soda
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, room temperature
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 large eggs, room temperature
  • 1/4 cup sour cream
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 1 1/2 cups mashed ripe bananas (about 3-4 bananas)

★Instructions

Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan or two 9-inch round pans.

Whisk together the flour, baking soda, and salt in a medium bowl. Set aside.

In a large mixing bowl, beat the butter until creamy. Add the granulated sugar and brown sugar, and beat until light and fluffy. This should take about 3 minutes.

Add the eggs one at a time, beating well after each addition. Mix in the sour cream and vanilla extract.

Stir in the mashed bananas until well combined.

Add the flour mixture in three parts, alternating with the buttermilk, beginning and ending with the flour mixture. Mix until just combined after each addition. Do not overmix.

Pour the batter into the prepared pan(s) and spread it evenly.

Bake for 25-30 minutes, or until a toothpick inserted into the center of the cake comes out clean.

Let the cake cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.

Luxurious Cream Cheese Frosting

★Ingredients

  • 1/2 cup unsalted butter, softened
  • 8 ounces cream cheese, softened
  • 4 cups powdered sugar
  • 1-2 tablespoons heavy cream (optional, for desired consistency)
  • 1 teaspoon vanilla extract

★Instructions

In a large bowl, beat the cream cheese and butter together until smooth and creamy.

Gradually add the powdered sugar, 1 cup at a time, beating on low speed until the sugar is fully incorporated and the frosting is smooth.

Add the vanilla extract and mix until combined.

If needed, add the heavy cream, 1 tablespoon at a time, to achieve your desired frosting consistency.

Assembly*

  • Once the cake is completely cooled* spread the cream cheese frosting over the top of the cake. If you’ve made two round cakes, frost the top of one layer, place the second layer on top, and then frost the top and sides of the cake.
  • Optional* Decorate with banana slices, chopped nuts, or a drizzle of caramel sauce for an extra touch of elegance.
