Brown Sugar Chicken in the Slow Cooker

★Ingredients

  • 1 cup brown sugar
  • 2 lbs boneless, skinless chicken breasts, cut into cubes
  • 1/3 cup soy sauce
  • 2 tbsp apple cider vinegar
  • 1/4 cup chicken broth
  • 1 tsp ground black pepper
  • 1 tbsp minced garlic
  • 1/2 tsp crushed red pepper flakes (optional for some heat)
  • 1 tbsp cornstarch mixed with 2 tbsp water (for thickening the sauce)
  • 1/2 tsp ground ginger (optional)

★Instructions

  • Prepare the Slow Cooker*
  • Lightly grease the inside of the slow cooker with cooking spray or a little bit of oil.
  • Combine Ingredients*
  • In the slow cooker, mix the brown sugar, soy sauce, chicken broth, apple cider vinegar, minced garlic, black pepper, ground ginger (if using), and red pepper flakes (if using) until well combined.
  • Add Chicken*
  • Add the chicken cubes to the slow cooker and stir to coat them evenly with the sauce.
  • Cook*
  • Cover and cook on low for 4-6 hours or on high for 2-3 hours, until the chicken is fully cooked and tender.
  • Thicken the Sauce*
  • About 30 minutes before serving, mix the cornstarch with water to create a slurry. Stir this mixture into the slow cooker to thicken the sauce. Continue to cook on high for the remaining 30 minutes.
  • Serve*
  • Serve the brown sugar chicken over cooked rice or noodles. Garnish with chopped green onions or sesame seeds if desired.
