★Ingredients

For the crust*

1/2 cup granulated sugar

1 cup (2 sticks) unsalted butter, softened

1/4 teaspoon salt

2 cups all-purpose flour

For the citron cream filling*

1 1/2 cups granulated sugar

4 large eggs

1/2 cup fresh citron juice (or lemon juice if citron is unavailable)

1/4 cup all-purpose flour

Powdered sugar, for dusting

2 tablespoons citron zest (or lemon zest)

★Instructions

  • Preheat the Oven*
Preheat your oven to 350°F (175°C). Line a 9×13-inch baking dish with parchment paper, allowing some overhang on the sides for easy removal.
  • Prepare the Crust*
  • In a medium bowl, cream together the softened butter and 1/2 cup of granulated sugar until light and fluffy.
  • Add 2 cups of all-purpose flour and 1/4 teaspoon of salt, mixing until well combined.
  • Press the dough evenly into the bottom of the prepared baking dish.
  • Bake the crust in the preheated oven for about 15-20 minutes, or until lightly golden.
  • Prepare the Citron Cream Filling*
  • While the crust is baking, whisk together the eggs, 1 1/2 cups of granulated sugar, 1/4 cup of flour, fresh citron juice, and citron zest in a large bowl until smooth.
  • Combine and Bake*
  • Pour the citron cream filling over the hot crust.
  • Return the baking dish to the oven and bake for an additional 20-25 minutes, or until the filling is set and lightly golden on top.
  • Cool and Serve*
  • Allow the bars to cool completely in the baking dish.
  • Once cooled, use the parchment paper overhang to lift the bars out of the dish.
  • Dust the top with powdered sugar before slicing into squares or bars.
  • Enjoy!
