- 1/2 cup (115g) unsalted butter, softened
- 2 large eggs
- 1 1/2 cups (190g) all-purpose flour
- 1 teaspoon vanilla extract

- 1/2 teaspoon salt
- 1/2 cup (120ml) sour cream or Greek yogurt
- 1 cup (240g) mashed ripe bananas (about 2-3 bananas)
- 1/2 cup (90g) chocolate chips (optional)
- 1/2 cup (80g) chopped walnuts or pecans (optional)

Preheat and Prepare*
Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan or line it with parchment paper.
Cream Butter and Sugar*
In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
Add Eggs and Vanilla*
Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Mix in the vanilla extract.
Combine Dry Ingredients*
In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon (if using).
Mix Wet and Dry Ingredients*
Gradually add the dry ingredients to the butter mixture, alternating with the sour cream (or Greek yogurt), beginning and ending with the dry ingredients. Mix just until combined.
Add Bananas*
Fold in the mashed bananas until evenly distributed.
Optional Add-ins*
If using, gently fold in the chopped nuts and/or chocolate chips.
Bake*
Pour the batter into the prepared loaf pan and smooth the top. Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted into the center of the bread comes out clean.
Cool*
