2 1/2 kg chicken breast (about 5.5 lbs)
1/4 cup mayonnaise
1 large onion (thinly sliced)
2 cloves garlic (minced)
1 cup shredded cheese (cheddar or your favorite)
1 cup French fried onions
1 loaf French bread (sliced lengthwise)
1 tbsp olive oil
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp paprika
1/2 tsp dried thyme
1/4 cup fresh parsley (chopped, for garnish)

- Preheat the Oven*
Preheat your oven to 375°F (190°C). - Prepare the Chicken*
- Season the chicken breasts with salt, black pepper, paprika, and dried thyme.
- Heat the olive oil in a large skillet over medium-high heat.
- Cook the chicken breasts for 6-7 minutes on each side, or until fully cooked and golden brown.
- Remove the chicken from the skillet and let it cool slightly, then shred the chicken using two forks.
- Prepare the Onion Mixture*
- In the same skillet, add the sliced onion and minced garlic.
- Sauté until the onions are caramelized and golden brown, about 10-15 minutes. Stir occasionally to avoid burning.
- Assemble the Chicken Bread*
- In a large mixing bowl, combine the shredded chicken, mayonnaise, and caramelized onions. Mix well.
- Spread the chicken mixture evenly over the bottom half of the French bread.
- Sprinkle the shredded cheese over the chicken mixture.
- Top with the French fried onions for added crunch and flavor.
- Bake*
- Place the assembled bread on a baking sheet.
- Bake in the preheated oven for 10-15 minutes, or until the cheese is melted and bubbly.
