Compact Caribbean delight

★Ingredients

  • 1 pound shrimp, peeled and cleaned
  • 1 pound steak, cut into strips
  • 2 cups yellow rice
  • 1 tablespoon olive oil
  • 2 tablespoons mixed spices (e.g., jerk seasoning)
  • 1 red pepper, cut into cubes
  • 1 yellow pepper, cut into cubes
  • 1 onion, cut into cubes
  • 3 garlic cloves, chopped
  • Fresh coriander for garnish
  • 1 can (14 ounces) chopped tomatoes, drained
  • Salt and pepper to taste

★Directions

  • Cook the Yellow Rice*
  • Prepare the yellow rice according to the package instructions and set it aside.
  • Season the Meat and Seafood*
  • Season the steak strips and shrimp with the mixed spices (jerk seasoning).
  • Cook the Steak*
  • In a large frying pan, heat the olive oil over medium to high heat.
  • Add the steak slices and fry until they are cooked through and browned on both sides.
  • Remove the cooked steak from the pan and set it aside.
  • Cook the Vegetables*
  • In the same pan, add the red and yellow peppers, onion, and garlic.
  • Sauté the vegetables until they are tender.
  • Cook the Shrimp*
  • Add the seasoned shrimp to the pan with the vegetables.
  • Cook until the shrimp turn pink and are fully cooked.
  • Combine Ingredients*
  • Add the drained chopped tomatoes to the pan.
  • Return the cooked steak slices to the pan.
  • Mix everything together and cook for a few more minutes to let the flavors meld.
  • Season with salt and pepper to taste.
  • Serve*
  • Serve the steak, shrimp, and vegetable mixture over the cooked yellow rice.
  • Garnish with fresh coriander.
