Classic homemade apple pie

★Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 cup (2 sticks) unsalted butter, chilled and cut into small pieces
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 6-8 tablespoons ice water

For the filling*

  • 3/4 cup granulated sugar
  • 6-8 cups thinly sliced and peeled apples (Granny Smith, Honeycrisp, or a mix)
  • 1/4 teaspoon ground nutmeg
  • 1/4 cup packed brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground allspice (optional)
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt
  • 1 tablespoon unsalted butter, cut into small pieces
  • 2 tablespoons all-purpose flour

For the topping*

  • 1 tablespoon granulated sugar (for sprinkling)
  • 1 egg, beaten

★Instructions

  • Prepare the crust*
  • In a large bowl, mix the flour, salt, and sugar.
  • Add the chilled butter pieces and use a pastry cutter or your hands to mix until the mixture resembles coarse crumbs.
  • Gradually add ice water, one tablespoon at a time, until the dough starts to come together.
  • Divide the dough into two equal parts, shape into disks, wrap in plastic wrap, and refrigerate for at least 1 hour.
  • Prepare the filling*
  • In a large bowl, combine the sliced apples, granulated sugar, brown sugar, cinnamon, nutmeg, allspice (if using), salt, lemon juice, and flour. Toss to coat the apples evenly.
  • Assemble the pie*
  • Preheat the oven to 425°F (220°C).
  • On a lightly floured surface, roll out one disk of dough to fit a 9-inch pie pan. Transfer the dough to the pie pan and trim the edges.
  • Pour the apple filling into the crust and dot with the pieces of butter.
  • Roll out the second disk of dough and place it over the filling. Trim the edges and crimp to seal.
  • Cut a few slits in the top crust to allow steam to escape.
  • Bake the pie*
  • Brush the top crust with the beaten egg and sprinkle with granulated sugar.
  • Place the pie on a baking sheet and bake for 45-50 minutes, or until the crust is golden brown and the filling is bubbling.
  • If the edges of the crust begin to brown too quickly, cover them with foil.

Enjoy!
