- Prepare the crust*
- In a large bowl, mix the flour, salt, and sugar.
- Add the chilled butter pieces and use a pastry cutter or your hands to mix until the mixture resembles coarse crumbs.
- Gradually add ice water, one tablespoon at a time, until the dough starts to come together.
- Divide the dough into two equal parts, shape into disks, wrap in plastic wrap, and refrigerate for at least 1 hour.
- Prepare the filling*
- In a large bowl, combine the sliced apples, granulated sugar, brown sugar, cinnamon, nutmeg, allspice (if using), salt, lemon juice, and flour. Toss to coat the apples evenly.
- Assemble the pie*
- Preheat the oven to 425°F (220°C).
- On a lightly floured surface, roll out one disk of dough to fit a 9-inch pie pan. Transfer the dough to the pie pan and trim the edges.
- Pour the apple filling into the crust and dot with the pieces of butter.
- Roll out the second disk of dough and place it over the filling. Trim the edges and crimp to seal.
- Cut a few slits in the top crust to allow steam to escape.
- Bake the pie*
- Brush the top crust with the beaten egg and sprinkle with granulated sugar.
- Place the pie on a baking sheet and bake for 45-50 minutes, or until the crust is golden brown and the filling is bubbling.
- If the edges of the crust begin to brown too quickly, cover them with foil.
Enjoy!
