Salted watermelon and feta cheese salad


1/2 cup feta cheese, crumbled

4 cups watermelon, cut into cubes or wedges

1 small red onion, thinly sliced

1/4 cup fresh mint leaves, chopped

1/4 cup fresh basil leaves, chopped

1/4 cup extra-virgin olive oil

Salt (preferably flaky sea salt) and freshly ground black pepper, to taste

2 tablespoons balsamic vinegar


  • Prepare the Watermelon*
  • Cut the watermelon into cubes or wedges, removing the seeds if necessary. Place the watermelon pieces in a large bowl.
  • Add Feta and Herbs*
  • Add the crumbled feta cheese, chopped mint, and chopped basil to the bowl with the watermelon.
  • Prepare the Onion*
  • Thinly slice the red onion and add it to the bowl.
  • Make the Dressing*
  • In a small bowl, whisk together the olive oil and balsamic vinegar until well combined.
  • Combine and Season*
  • Drizzle the dressing over the watermelon mixture. Gently toss everything together until well combined. Season with salt and freshly ground black pepper to taste.
  • Serve*
  • Transfer the salad to a serving platter or individual plates. Sprinkle with a little extra flaky sea salt just before serving for an added burst of flavor.
