Orange cake without milk or flour

1 cup almond flour

1 cup sugar (you can adjust according to your taste)

3 large eggs

1/2 cup freshly squeezed orange juice

1 teaspoon baking powder

Zest of 1 orange

Pinch of salt


Preheat your oven to 350°F (175°C). Grease and line a cake pan with parchment paper.

Separate the egg yolks from the whites. In a mixing bowl, beat the egg whites until stiff peaks form.

In another bowl, beat the egg yolks with sugar until pale and creamy. Add the orange juice and zest, and mix well.

Gently fold the almond flour, baking powder, and salt into the egg yolk mixture until just combined.

Carefully fold in the beaten egg whites into the batter until no white streaks remain.

Pour the batter into the prepared cake pan and smooth the top.

Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Once cooled, dust with powdered sugar or glaze with a mixture of orange juice and powdered sugar for extra flavor.
