Cinnamon upside down rolls with banana bread


  • 1/4 cup granulated sugar
  • 3 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 2 1/4 teaspoons active dry yeast
  • 3/4 cup warm milk (110°F/45°C)
  • 1 large egg
  • 1/4 cup unsalted butter, melted

For the Filling*

  • 1/2 cup brown sugar, packed
  • 1/2 cup unsalted butter, softened
  • 1/2 cup mashed ripe bananas (about 1 large banana)
  • 2 tablespoons ground cinnamon

For the Topping*

  • 3/4 cup brown sugar, packed
  • 1/2 cup unsalted butter, melted
  • 2-3 ripe bananas, sliced
  • 2 tablespoons maple syrup or honey


  • In a small bowl, combine warm milk, granulated sugar, and active dry yeast. Let it sit for about 5-10 minutes until frothy.
  • Prepare the Dough*
  • In a large mixing bowl, combine the melted butter and egg. Add the yeast mixture and stir to combine.
  • Gradually add the flour and salt to the wet mixture, mixing until a dough forms.
  • Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic.
  • Place the dough in a greased bowl, cover, and let it rise in a warm place for about 1 hour or until doubled in size.
  • Prepare the Topping*
  • In a small bowl, combine the melted butter, brown sugar, and maple syrup or honey. Pour this mixture into a greased 9×13-inch baking dish.
  • Arrange the banana slices over the sugar mixture.
  • Prepare the Filling*
  • In a medium bowl, mix together the softened butter, brown sugar, ground cinnamon, and mashed bananas until well combined.
  • Assemble the Rolls*
  • Once the dough has risen, roll it out on a floured surface into a large rectangle, about 1/4 inch thick.
  • Evenly spread the banana filling over the rolled-out dough.
  • Starting from the long edge, roll the dough tightly into a log. Cut the log into 12 equal slices.
  • Bake*
  • Place the slices cut side down on top of the banana and sugar mixture in the baking dish.
  • Cover and let rise for another 30 minutes.
  • Preheat the oven to 350°F (175°C). Bake for 25-30 minutes, or until golden brown.
  • Serve*
  • Allow the rolls to cool in the pan for 5 minutes, then carefully invert onto a serving platter so the caramelized bananas are on top.
