Grilled lamb with herbs

Preheat your oven to 350°F (175°C).

In a small bowl, mix together the minced garlic, chopped rosemary, thyme, parsley, olive oil, salt, and pepper to form a paste.

Place the leg of lamb in a roasting pan, fat side up.

Using your hands, rub the herb paste all over the lamb, ensuring it’s evenly coated.

Roast the lamb in the preheated oven for about 1.5 to 2 hours, or until it reaches your desired level of doneness (for medium-rare, the internal temperature should be around 135°F or 57°C).

Once done, remove the lamb from the oven and let it rest for about 10-15 minutes before slicing.

Slice the lamb and serve with your favorite sides, such as roasted vegetables or mashed potatoes.
